I have owned and used Acrobat PRO X for several years now.
At my south office, however, I joined Creative Cloud so I could get all my fave Adobe programs running on my computer here.
DC Pro is a friggin NIGHTMARE. It's nothing like Acrobat Pro X and the simplest things like OCR are buried in parts unknown under the side "toolbar".
Adobe: Why did you destroy Acrobat Pro usability by making things impossible to find.
I JUST WANT TO USE VERSION X.
How can I do that?

Let me guess: Acro X was your first version of Acrobat?
The reason I say that is any time there is a big jump on the UI, what you originally worked with is probably your favorite.
When X came out i HATED it. With XI was released I felt they fixed a lot of my problems with X. With DC there is more improvement on the new UI (IMHO)
My first suggestion is to work with it. Do not try to make it work as you are used to, it's a losing battle. Trying to make a cat work like a dog is not much different. Cats do NOT understand the word "fetch." Dogs don't understand that either they just do it naturally.
BUT to try to answer your question: First go find the Creative Cloud app (on a Mac it's the infinity cloud in the menu bar). Sorry I am not sure where it's found on a PC but either way it should be running. when you look at the Applications tab, on the left side it shows the applications and on the right side it will either say "Open," "Install," or "Update." However, on the far right you'll see an arrow for a dropdown menu offering "View Tutorials," "Other Updates," and "Uninstall."
Unfortunately for Acrobat it only shows: "View Tutorials" and "Uninstall." This is because Adobe really really really does not want you to have more than one version of Acrobat on your computer at a time. My GUESS is that if you were to uninstall Acro DC, you can look for "Other Versions," and then install Acro X. If this doesn't work you can always reinstall Acro DC. (Sorry, I do not wish to try this as I like Acro DC and do not need to go back.)
I do hope this works for you.
Alternatively I do hope you stop trying to use Acro DC as if you were still using Acro X. However, if there are specific workflows that do not work with Acro DC and you feel that Acro X was more efficient, what are they? I'm curious.

Unless I want to go dumpster diving deep in the menus, I don't see an easy way to do the three things I do the most.
1. Add or Edit a TEXT BOX.
2. Perform OCR on a document.
3. SIGN a document. (I finally found this.)
Upgrading a heavily used app like Acrobat Pro shouldn't be like switching to an entirely new application. Should it?
This is beyond ridiculous. And this ridiculousness is costing me $50 a month to own software that isn't even usable.
