Is there a way to create a PDF form which retains text in form fields which remains editable?

I have a PDF created by someone else and don't have the source file. I want to create an editable PDF with form fields, some of which need to retain existing text in the form fields - but which the client can then edit if necessary. I'm sure there is a way to create a form with retained text in form fields but can't seem to find it !! Any help gratefully received 🙂

Doh - super blonde moment and obviously not enough coffee this morning!!

I wanted to use existing text as form field but it wasn't being detected - so had to edit it out and then paste back in

Form fields are meant to retain their values, unless you edit them or clear the form... That's the whole point of using them.
