Issue with saving metadata xmp files from PDFs

Have some pdfs I'd like to edit the metadata of, but each time I try and save them, I get the "You don't have permission to save in this location..." Not sure why as I am the admin for my personal laptop, so this error makes no sense. I am using Windows 10 and Adobe Acrobat Pro DC Version 2021.011.20039

Forgot to mention, I normally save the xmp files, make edits, and then replace the originals with the edited versions using the replace option.

Go to Edit - Preferences - Security (Enhanced) and disable Enhanced Security, Run in Protected Mode, Run in AppContainer, etc.
