Merge Documents with Similar File Names

I am trying to combine multiple files into a pdfs based on the first 5 letters of the file name. You used to be able to do this through the plug-in menu, but now it is gone. Any ideas?

Then you had an external plugin that did it. Acrobat can't "look up" files in the file-system on its own. You have to either select them yourself or know their full name in advance in order to do it using a script, for example. A plugin might be able to examine the contents of a folder and look for files matching this pattern.
