"Read Only" fields in Adobe Forms

Hi. So I have created a form to use for short term rental agreements. I need 5 fields within the form to be editable each time I use it, but "read only" to the recipient so the guest cannot change the field value. However if I choose "read only" when I save the form, it prevents me from editing it the next time it is opened. If I choose participant role "sender" , it makes the field invisible to the recipient. This seems like it should be a fairly simple thing to accomplish, but the program doesn't seem geared toward making it easy. Any Advice?

Yes, that's correct.  I am using Adobe Acrobat, with the e-signature function. The signature portion works fine.  My issue is I need to save the Form in a way that allows me to edit the Name, Date, and Cost each time it is sent. However, if I change the field to "read only", I will not allow ME to input new information each time it is opened. If i change the form to "Participant: Sender" it makes the field invisible to the recipient. There doesn't seem to be a way for me to save the form ina way that those fields are editable for me, but not for the recipient.
