If that doesn't work you will need to be more specific. Which kind of highlights, which version of Acrobat do you have, etc.

How were the highlights applied? If they were created before the PDF was created you will need to use the text edit tool and then right click to change properties.

Got it! Going to the Commenting tab showed me that the text had been
highlighted multiple times and each time I deleted one highlight it looked
like nothing had happened. So I deleted them all and, voila, highlighting
gone.

The Commenting tab showed me what was there.
