I was given a large pdf file where the body of the text is entirely in grey. It looks fine on screen but when printed it's almost illegible because the grey text comes out so faint. Is there an easy way to convert all the grey text to black without affecting the color of other document elements? Thanks!

Yes, you could conceivably create a Preflight Fixup for this. It may be a little tricky depending upon how sophisticated you want or need the fixup to be (all grays, a particular gray, etc.) and whether you want the result to be G=(0) which is grayscale black or CMYK=(0,0,0,1) which is CMYK black – same printing results.
