Is there a short cut /hot key set up I can use to replace to my selected font?
I have my default font on in preferences, but I have pages with multiple text boxes I need to change by lobourously scrolling down the font list for each time to change

That would make sense, but shortcuts are usually attached to menu items and tools. I think that is a steps too far.
Please consider adding a request for a Find/Replace fuction, or a way to highlight fonts at the top of the list like in other Adobe design products (like 'recently used') in the User Voice Adobe site for submitting new ideas.
Is there an option where you could return to the original design file?

The shot answer is no.
You can take the PDF over to Illustrator and make global font changes id you have edting rights and the typeface.

Next question; Can I 'over ride' the text selector and select a block of text. In the image the top half is in a block but the lower lines of text are one 'liners' ?

Sorry, when a pdf is created, the way the text is broken into boxes is out of your control.
Have you tried to hold the shift key down and add to your selection? either with the text selection tool or with the 'black arrow' ?
