Signing pdf form lockout

Once I sign a pdf form and save it, when I re open it, I can no longer add or charge anything in the form boxes. 
HELP! 
I can add things to and save and reopen and keep editing the form fields just fine, but once I add my signature it locks out any future changes. How to I fix this?

There is an option to Lock Document when signing. If it is a checkbox during signing, don't check it. If it is an authored setting on the signature, there won't be a checkbox and the document will lock. Make all changes before signing.
