Typed Text moved to the back layer behind original document text after saving PDF and reopening HELP

I'm using Adobe Acrobat 2017 (I've attached the version below for reference).

 

I downloaded a copy of a PDF document from the internet... actually a manual. Inside this document/manual is one fillable page that I needed to save alone... so after editing the main document, I used the "Organize Document" option to remove every other page accept the one I needed, and then saved the PDF document as a new doc. I need just this one page to fill in and keep a record of all the settings from my 12 yr old sons Diabetic PDM (Personal Diabetes Manager device). You need this information to set up and transfer the exact correct settings to a new device (which I need to do tomorrow, it's a replacement device). The settings are for making sure the device distributes the correct amounts of insulin... I try to keep records of the changes for situations like this and decided I'd rather keep a digital record so I don't have so many lists laying around (more information than you really need... sorry!). Anyway, after saving the PDF, I then edited the PDF through Acrobat so I could fill in the fields with my sons PDM information, which I did successfully. I then saved the document. So far so good... I've done this many times in the past with various PDF's. This time though, after I went back into edit mode to change a couple things I typed, all of my typed text fields have moved and are now behind the original document text fields, literally they it moved to the back. I'm not sure why that happened, considering Acrobat saves the most recent text typed in the front, and on top of any older text... so there really shouldn't be an issue like this. I attempted to select the original text boxes/fields that are now covering my typed text fileds, right click and send them to the back (thinking the software gitched, or something happened that I'm just not getting here). That didn't work! Why wouldn't the "Send to Back" or "Move to Front" options work?? They should! This is not cheap software. Wasn't Adobe supposedly one of the first companies to create this PDF software, if not the very first company, Right? So my question is "What the heck am I doing wrong"??? I really like to try and fix my own issues, that's how you learn... but I've been messing around with this for a while now... I even tried looking up answers on Google. I can only find one instance of this topic in the Adobe community. The most I got out of that post was... someone suggested moving the original text field to get at my typed text field, copy the text box then delete the field, move the original text field back to it's normal position, and replace (paste) the field back on top. Wow! They say that Adobe is supposed to remember which object was placed first. Sounds like a fairly simple task... But I don't want to have to do this to every single piece of  typed data that I added to the document.... AND I SHOULDN'T HAVE TO ADOBE!!! Am I doing something wrong./? Is there a trick to this? I want to know the solution, because this isn't the first time I've ran into this issue where layers of text, aren't where they should be! Not to mention, it should just be a simple solution like I mentioned above, where I can just right click on the text box/field and select, "Move to the back"... or "Move Backward". This is rediculous. Please, if someone knows the solution, would you please share your insight with me. I'm literally ready to get rid of Acrobat software and purchase a more reliable PDF editor. This is so rediculous that the software has this kind of issue. You should be able to edit layers of text easily, especially in Adobe Acrobat. As I mentioned, I'm not even sure why my typed text moved behind the original document text fields to begin with but there's got to be a better way to fix this!

Do you have the option to extract the desired page? Try that before making your changes. You may have lost the form fields when you saved the PDF. I don't have Acrobat standard version, so I'm not sure what your save options are. Can you Save as Other> Reader Extended PDF?

 I believe form fields are always on the top layer, so your form fields have probably been converted to text.
