This might be because of scanner drivers are not installed properly or scanner is not connected to machine.

Please try some troubleshoot option available in the link https://helpx.adobe.com/acrobat/kb/troubleshoot-scanner-issues-acrobat.html. If the issue still persist please let us know.

As per the issue description mentioned above, you are unable to change the default setting or predefined settings for scanner, is that correct?

As we have checked the account details using the email address you are logged into the forums, you have subscription for  Acrobat Pro DC. Could you let us know what happens when you try to change default settings or predefined settings for scanner in Acrobat? Is there any error message?

Also, let us know dot version of Acrobat and the operating system installed on the machine? You may refer to the steps given in this link on how to check the version: Identify the product and its version for Acrobat and Reader DC
