Hello,
We have a user using Adobe Acrobat DC that keeps having a problem. Randomly when clicking through menus or other parts of the PDF, the document will become completely white except for the fillable fields. The user also cannot always save the document, getting the error code; "The document could not be saved. An unexpected network error occurred." I have looked into just about every solution available and none have worked.
So far I have:
We are currently running on Windows 10 Pro (1809), with the DC version up to date.

We apologize for the delay in response to your issue.
Looking at the description given above, it seems you only getting the blank space within the form field box, rest of the form is fine? And it also seems that you did try almost all the possible solution to fix it but none of them helped.
Was text getting disappeared after clicking out of the box or somewhere else on the page for a specific form or this happened with multiple forms? If its a single one, then you need to check how exactly the form was created, and its field's properties.
Also, Adobe Acrobat official update (19.012.20034) is now available. This update will be automatically pushed to all existing installations of Acrobat. If you want, you may also manually trigger the update early by opening the application and going to Help > Check for Updates- DC Release Notes — Release Notes for Acrobat DC Products
Let us know if it still didn't fix, and if you have managed to find the solution to this issue, then please do share your findings.
