Unfortunately, you don't have any control over how the PDF to Excel conversion works.
Converting from PDF to Word, Excel or any other format is one of the most complex things you can try to do with a PDF file. It works very well in some cases, in other cases the output has very little to do with the original file. The key for success is that the PDF file needs to be "tagged" - which means that it contains information about the information that is displayed in the file. The best way to make sure that a PDF file is tagged correctly is by using the PDFMaker in Acrobat to create the PDF file from Word or Excel (that's the Acrobat ribbon or toolbar).
If you are not getting the output you are looking for, unfortunately there is not much you can do to improve the output without spending a lot of time (e.g. by manually tagging the file). Also, if you are using Adobe's ExportPDF service and don't have access to Acrobat, that is not even an option.
BTW: Compared to some other output I've seen, what you are getting is pretty good.

You can't downgrade. If you have a license for X then you can install it, but if you purchased a license for DC then you have to use that version.

Actually, if you have a subscription to Adobe Acrobat DC, you should be able to run Adobe Acrobat XI using your Adobe ID - this does not work for Acrobat X - there never was a subscription option for Acrobat X. So, if you get the same behavior that was in Acrobat X in XI as well, with a subscription, you can run the older version XI.
Also, if you have a volume license, you can run an older version of the software (see here for more information: Find information on Adobe's Volume Licensing plans - looks for the term "Backward licensing"
