Digitally sign

I have windows 7 and Adobe Acrobat Pro DC. I open pdf documents that my staff creates and I digitally sign my approval. I have one employee where when I open his documents and select certificates, the "Digitally Sign" is grayed out. Can anyone help me?

If you sign a document with the option "Lock document after signing" then nobody else can sign this document after you. Maybe this is the problem.

What does it show when you select: File > Properties > Security
