Just wondering if there is a way to insert an interactive simple bar chart in pdf forms?

intention is to give a simple overview to the user.

Yes, but it's not easy to set it up. It requires some scripting know-how and some work setting it up.

Here's an example of something similar I've created as a (paid-for) tool that converts Percentage fields to a kind of bar chart:
