Use Preflight (Edit -> Preflight), in the Preflight window switch to the "Fixup list" by clicking on the small wrench icon in the Preflight window, search for the fixup "Scale pages to A4" and then run the fixup by clicking on the "Fix" button.

It seems you are looking at the preferences window. That is not the same as the "Preflight" window (which you can open through "Edit" menu -> "Preflight..." menu item) 😉

Are you saying that the ratio of some your pages is more long or more wide than applies to A4? What would you expect to happen in this case?

I crop the pages (they are hight more o less the double of A4) .
But, for example, if I add a new white page it is created long ( not A4).... I had to crop it
If is not a problem I go on in this way and I crop the new pages.

A thing
if I crop to A4 but I want to leave a white border of 10mm all around (4 sides) can I set it for all pages or I had to do manually ( will be not precise) ?

Again, please look at Preflight - there is a fixup called "Set page geometry boxes" which allows you to adjust existing page geometry boxes (like CropBox for cropping pages) in a very flexible way. Such a fixup would then be applied to all pages.
If it is more often that you have similar needs it will be worthwhile to familiarize yourself with the various fixup features in Preflight. They allow for flexible configuration, and once saved as preconfigured fixups you can easily apply them to any number of documents. You can also include fixups when setting up actions with the Action Wizard (though for this to work you first have to include them in a profile, as the Action Wizard will only list profiles; it is OK for such a profile to only have one fixup in it).
