Adobe Acrobat Pro XI provides the ability to encrypt the document with various levels of encryption. 256-bit is among them. But there are "flavors" or levels of 256-bit encryption. Which one is Adobe using?

I don't understand your question... Adobe is not using encryption for anything. It's a part of the application, which you can use, as the user.
