Not able to extract data from fillable PDF using Power Automate

I have a simple flow to extract the data from a fillable PDF. Using the Extract to JSON actions (file or object) - I get the JSON code, but in the elements segment - I get none of my data values.

Here's a sample of the text items - in this case, this is an input label. But the actual data value does not follow. 

"Text": "Business Legal Name (\u201cBorrower\u201d) "

I've attached the extracted JSON file.

Here is my flow. Am I not using the correct action from the PDF Services connector?

The Extract service does not extract the data from interactive form fields. At this time, we don't have a service for that.
