Power Automate - Convert Excel to PDF - Date formatting not consistent

I have a very simple Power Automate flow set up where a shared inbox recieves an email and the excel attachment is converted to PDF and shaved to sharepoint. 

 

I am running into an issue however where after the conversion, the date that I had formatted as =text(C$10,"dddd, mmmm dd, yyyy") is not returning correctly. When I would expect "Friday, January 31, 2025" I am getting "2025-01-31 00:00:00.000".

 

What do I need to change to have the date show correctly on my report?

This is being done with the Adobe Convert Excel to PDF step within Power Automate. My excel file has it formatted correctly so something is happening during the conversion.
