I thought this would be an easy thing to do; but not so!
Can someone please provide instructions on creating a linearized PDF with Adobe Acrobat Pro?

You don't need to use Optimuse PDF. There is an option in preferences. If on, every Save As (not Save) will lInearize. The option is "optimize for fast web viewing"
