Can someone explain to me how Adobe Sign Teams works? If I have 200 employess, do I need to buy 200 individual liscenses? In my mind the word "teams" means it sould at least encompass a department. Does team mean, that people work on the same doc as a team but they each have their own liscense?

As you have 200 employees, then Adobe Sign Team is not your plan. You should check out the Adobe Sign business or enterprise.
To get more information, you may check with the sales team as they will be able to provide you with correct suggestions. You may reach out to the sales team via the following page: https://www.adobe.com/sign/pricing/plans.html. Once you open the link, click on the Teams tab and use the contact us button provided under the Acrobat Sign Solutions box.
