Just checking - I gather there is no "Sandbox" environment for Adobe Sign but the Developer Account works in much the same way as a dev sandbox environment normally would here?

They are not the same thing. Dev accounts have been around since all time and behave like any other Sign instanc, albeith with some restrictions like watermarks on the output. But they are free to register for.

There's no logical connection to any Sign production account you may have.

Also Dev accounts run from the same infrastrucure (adobesign.com) as any regular prod instance, As email addresses are unique, you can therefore not use the same email address for a user in Dev and your production

Sandbox are new at the time of writing. They are not free and have their own subscription cost.

Sandboxes run on a different infrastrucutre (adobesignsandbox.com), so you can have the same email address for a user in your sandbox and production. And there's a locgical connections between the 2 as well, allowing you to share assets (templates webforms groups etc) between the 2.

if you are happy with your existing Dev setup, there's no need to go for a Sandbox. If you like the soun of the feature than reach out to your Adobe rep for more info,
