My client has already successfully signed the document, but he continues to receive reminder emails to sign. How do I stop those emails being sent to him??

Please let us know if this happens with a particular signer. Check the reminder status for that document under the manage page.
Let us know how you added the reminder and the settings used for the reminder. Sharing screenshots would be helpful.
