I would really, really, really like to be able to set the default field characteristic to "Required". Is there a way? It takes me about 4 times longer to prep a document to send by having to right click on every blank and check "Required." I doubt seriously that signature or initial blanks are ever "If you feel like it", so it seems the standard should be to force an entry in the field.

Sorry for the delay in response.
It is not possible to set the default field characteristic to Required".
It has to be done manually every time you add fields to the form.
This is an as design behavior.

Where it is correct that there is currently no function to set a default for new fields, you do have an option to configure one field, and then copy that field multiple times. Using the Copy Field tool will create a new, uniquely named field that inherits all of the properties of the original field. So you can set the font appearance, required value, validation, or any other property.

The field name will be counterintuitive, but no more so than the default field name applied during the drag and drop experience. It is always recommended that you rename your fields with a meaningful value.
