Im trying to find the captial S (Swashes) used in the images they show examples for for Bookman JF

The easiest thing to do is open the Glyphs palette and select the desired swash characters from there. Important note: it looks like some swash characters, like a copule of the ones for the captial S, are only available in the italic style. They're not in the upright style.
I think the Bookmania type family from Mark Simonson has more consistency of alternate glyphs between the italic and upright styles. Plus, Bookmania has certain character sets not available in Bookman JF, such as a native small capitals character set (and a whole lot of swashes and ligatures to go with it).
