 I need to encode a music file from itunes to a workable format to use in audition. How do I use encoder to do so? Can I remove vocals in audition?

I'm surprised you "need" to encode music files in iTunes for Audition. Audition should accept mostly any file from iTunes. If you right-click on your file in iTunes and select "Reveal in Finder," what file type is it? I wonder if you even really need to encode anything, or if you can import your original file into Audition without encoding.
