How to disable Adobe Animate access to my Mac Documents folder?

I just updated to O/S 11.0.1 (Big Sur) and also to Adobe Animate 2021. I unwittingly agreed to allow Adobe Animate to access my Documents folder. How can I disable that? Why does it need access? So that it can open my files? Since when is that permission required? Where are the settings for these permissions?
