How do it reduce the loading time.

How do you reduce the load time on SCORM content? My project is taking about 5-7 minutes to load. It does have very may large images or video files. Any advice is appreciated.

I think you may have answered your own question.

If the project has lots of large images and video files, reduce the size of both and your project will load quicker.

Alternatively, break your project up into smaller modules so that the entire thing doesn't have to be loaded each time.

I have a project with a lot of video content, and I find a simple workflow is to upload the content to Vimeo, and then download their version. Their compressors are good and it's a really simple workflow.

5-7 minutes is way too long though. I thought Captivate had some sort of built in compression as well? Do you have an example of your file to look at - to see if it is a local issue to you.
