I inserted a text animation onto my slide, and it worked fine. Then I decided I didn't want it, so I deleted it. Now I can't insert a text animation onto any slide at all. I click the Text Animation button and nothing happens. I try Insert --> Text Animation and nothing happens. Any thoughts?

First thing to do in these cases is just close down and reboot the computer again. Perhaps some DLL that Captivate uses for this operation is having a bad hair day or something.
Next, this is a long shot...but...Were you by any chance using a second monitor at some time while editing your project? If so, the dialog box that allows you to configure options for the Text Animation might be appearing off screen somewhere. However, I said this was a long shot because this dialog is modal. So normally you would NOT be able to do anything else in your project or even open menus until the dialog was closed down again. In your screencast it shows you being able to still open menus.
The other possibility is that your Preferences have become corrupted and you might need to blow away the Preferences folder on your machine so that Captivate can recreate it again on next launch.

just to add some more information to the RodWard's answer, you can try the following step to recreate the preferences :
1. Close Adobe Captivate.
2. Locate the preference folder:
- Windows Vista and Windows 7 : C:\Users\[user name]\AppData\Local\Adobe\Adobe Captivate 5 folder
- Windows XP: C:\Documents and Settings\[user name]\Local Settings\Application Data\Adobe\Adobe Captivate 5 folder
- Mac: /Users/[user name]/Library/Preferences/Adobe Captivate 5 folder
3. Rename the preference folder.
4.Restart Adobe Captivate. A new configuration folder is automatically created.

I have Windows 7, but I don't see a Preference folder.

you will see a folder with name 'Adobe Captivate 5.5', that is the preferences folder.

Using the Window --> Widget and then changing the filepath to the TextAnimations folder worked. Thank you!
