Is there a way to "force" the users so that they can view slides only in sequence, that is, they can't move to the next slide until they have viewed the current slide? Also, is there a way to customize it so that, while they can move freely within each individual module, they can't take a module's knowledge check of the course's final assessment until they have viewed all the prior slides?
You need to forget about the playbar but create custom navigation.
The Table of Content can be set up, so that only already visited slides can be revisited. That could help with one of your requirements. For other controls like TOC, CC, audio mute/unmute you can have a look at this article:

As for the forcing, that is pretty easy to do. Just turn off any navigation controls. Then only provide forward buttons or construct things so they naturally progress from slide to slide.

WIthin one file, if you work with custom navigation buttons (can be on the master slide, or timed for the rest of the project if you use shape buttons) you will have total control over the sequence, which means that you can put the quiz slides at the end.
