The ColdFusion 8 Application Server service restarts itself.
The platform is Windows Server 2003 and IIS 6. In the Windows event
viewer it just shows a warning saying the ColdFusion 8 Application
Server is restarting. Any idea what might cause this. It occurs
daily at different times (sometimes more than once per day).

I don't think Coldfusion restarted itself. It might somehow
simply have stopped, and Windows restarted it. To verify, go to the
Control Panel and open
Services. Right-click on the Coldfusion 8 service and select
Properties. Click on the tab
Recovery. Is Windows configured to restart Coldfusion after
a failure?
