We have 2 brand new Apple Mac's with Catalina, and the most recent Mac sent to us is with Bigsur. The Catalina Macs run perfectly with Photoshop. The Bigsur Mac not so much as we can't dial in our colors on the printers. We use Epson F170 sublimation printers, which won't offer the same color options with Bigsur as we get with Catalina.
We have played with the settings however find ourselves at an impasse as we need print consistency for production.
Any assistance would be appreciated.

So, the Epson driver doesn't work as well? I suggest you contact Epson. If you don't believe it's the driver, please explain what "dial in the colours" actually means. Ideally, screen shots from the "good" and "bad" Macs.

The Catalina allows for the Epson driver to list several options to print with that the Bigsur does not. We have inquiries into Apple also, however we were hoping to find an answer with AdobePS. In otherwords has Adobe followed Apple's OS upgrade? If so what can we do to manage the driver? If not when will they? I must have consistency with the printers for our production to run efficiantly. I was also looking into the new MacM1, however I fear I will face the same issues. We are a heavy user of PS.
We can test through the print offerings however that can take days.

Hi Chad,
If you have a printer ptofile you can apply it in PS using Image / convert to profile. Save these images as print only files and send them to your printer. All OS's support this workflow.

If the print driver looks different (different options, generic media [paper] names) then tou may be looking at OSX built in driver, the Gimp / Gutenprint driver.
Download and install the Epson driver for your OS X version [IF there is one], follow the instructions carefully.
In OSX, make sure you have selected the exact printer name when adding the printer and don't use the "airprint' option
