Can you hide self view as you do in Teams or Zoom?

It depends on your purpose - Adobe Connect allows more anonymonity than other tools...
Your request is whether you can "hide" self-view, which I assume means to not share your web camera. What's great about Adobe Connect is that unless you specifically enable your web camera, it will not appear so there is no need to hide your camera. Just don't turn it on.
Other advantages or ways to hide yourself (as a Presenter/Host) is to have the Attendeed Pod moved to the Backstage area. That way hosts/presenters can see who is in the meeting and interact with them, but participants won't necessarily know who is behind the one-way glass, so to speak. Moving the Attendees pod; and disabling the ability for participants to privately chat - you can have a limited set of hosts/presenters turn on their web cameras and interact with participant(s). Imagine an interview process where the participant only sees one person, but there are actually multiple other people attending and watching/listening/providing feedback.
