Is there a way to set a custom domain for my Adobe Connect URL?

Not if using a hosted service. If you desire a custom domain, then you would install the on-premise version of Adobe Connect Server and use your own domain name.

With the hosted version of Connect you can customize what comes before adobeconnect.com. So if you don't like what is there, like if you still have connectpro2011071588595512.adobeconnect.com or something similar, you can request that it is changed to something more appropriate, like mycompanyrules.adobeconnect.com. Beyond that option, yes, Heyward is right that you need the licensed version of Connect and you can then make the URL anything you want.

If you are hosted, just call 800-945-9120 and they will be able to help you change your URL. Be aware that changing your URL could lead to other issues if you have applications that use API calls to the server, or if you have standing links posted somewhere, as the old links may become broken.
