A stupid question I know and probably has a very simple answer.
I am trying to create a sitemap and do loads of site checks to improve my search ranking which is dropping almost daily.
So how can I find the total number of pages that I have created on my site www.ultimate-top-trumps.co.uk?

If you made your site in DW, you can see all of your pages in the Files window. If the site resides on your desktop, and you've organized it logically, keeping all of the pages in one folder and images/scripts in others, you can get the properties of that folder to see how many files you have and what they're called. You can also use Google, by typing in site:yoursitehere.com and doing a search. They say you have about 370 pages on your site.
Site maps really aren't for helping search engines though. The best ways to improve your organic search ranking is to have regularly updated html text content that is relevant to what your desired search terms are, and to link your site to and from other relevant resources online that are also updated regularly with actual content.
A site map of links, a group of backlinks in totally unrelated forums, and a list of seemingly random terms hidden in the code of a page (the keywords meta tag for example) don't do much of anything positive to your search results.

There are numerous online site map generators and browser add-ons that will index your entire site -- providing all your pages are public-facing and not hidden behind a protective curtain.

But as Jon says, SEO is more than sitemaps. If you want to boost traffic, buy some keyword ads on Google & Bing. To keep costs down, set your budget and limit ads to specific regions that you want to target.
