How do I set up a directory path in new DW, and how do I stop it from uploading all my websites, if all I want is to upload or put one website to the remote server

Create a separate site definition for each website (domain).

Site > New Site...

 

For example, I have a public facing site and a members only site on one server.

The public facing is Site1. 

The members only site is Site2.

Each site has it's own local folder and remote server log-in details.

I'm probably misunderstanding your question, but if your site is well defined within DW , as @Nancy OShea presents it, and you only wish to send one folder, you can right-click on that folder, from the file panel, and select Put from the drop-down menu... then only that folder and its contents will be transferred... not the entire web site

What exactly are you trying to do? What problems are you encountering ?
