Brush width and size varying drastically

I'm using AI on an iPad 12.9" Pro, (5th Generation), OS 17.1.2 with an Apple Pencil Gen 2
my issue is I'm using the paint brush tool and my results from the brush are varying drastically. I have been experimenting with a few different brushes. Mostly, but not all custom brushes. Using the brush with basically the same exact technique, pressure, motion, etc etc. the brush is much thicker or much thinner. It's really screwing up the drawing and slowing me down a lot. How do I fix this? The example in the image attached, is an example where it was actually much less severe than many other times it has happened since I started trying to work on AI for iPad.

Have you checked the Shape Dynamics settings for the brushes? The setting could be ramped up to a high value.

How do I change this setting on iPad? I googled around for it and of course only found answers for this for desktop, which I already know how to change. But the iPad version is so different. Thank you.

When the brush tool is active, then at the very bottom of the toolbar there is a button with the brush settings icon. Click on that.

I don't see those same options when I have the "Blob Bursh" (Tropfenpinsel) selected. I don't see how I can enable these settings for the Blob Bursh. Any ideas?

On desktop I always used the blob brush. But I can't get the blob brush on iPad to behave the same. The longer the line is, the beginning and middle of the object being drawn keeps expanding in thickness and size. I wish I could get it to look like it does on desktop. If I could, this wouldn't be an issue I think.

Also.  Different issue with the same brush.  The color is locked to black. I've tried switching the stroke color to other colors and it doesn't change.  I know I can expand the path and change it, but I'd like to avoid that

Blob brush shapes do not need to be expanded. Is this not about the blob brush?

No that's a custom normal paint brush. I tried experimenting with the blob brush but it just feels and looks so different than the desktop version. I made a little video of what the blob brush does. I really dislike the look of it. The blob brush on desktop looks similar to the brush results in the image I'm attaching. Except obviously a stroke.
in the image I'm attaching, there are 2 thicker lines and 5 thin lines. It's weird. I am using the same technique, pressure, etc etc on all 7 of those lines. I made the thicker lines first. Zoomed in a bit. Rotated the screen some. And then those 5 lines were much smaller and thinner. It's really annoying me. I actually like the look of the result. Just hate the inconsistency.

Is that a default brush you are using? Or a brush you loaded from somewhere else? I can't reproduce that.

It's a brush I purchased from Creative Market. I don't really like the look of any of the default brushes. But I seem to be having a similar problem with the default brushes as well.
