there's no access to change brush options in Illustrator

Best we can do is just work off a lot of pre-defined presets, or saved brushes with their presets all differently defined rather.

how do i change presets or deal with em in AI ?

What I mean was that you make a lot of different brushes and then just apply the one you need to the item.
