Is there any way to disable the constant ads or "nudges" that keep interupting my work? Every other minute it's another "Hey did you know?" giant animated pop-up highlighting something. I just want to do my work, I don't want nudges to get me to do stop working to do something your commercialisation team wants me to do. How can we disable or turn this off?

They should only appear once and then when you close them they shouldn't reappear unless the preferences get a reset.
Does Illustrator perhaps crash when you quit? In that case the preferences don't get written and Illustrator doesn't notice you closed the popups.
As for the AI popup - in Preferences > General can you turn off the "Content aware defaults"

That'd be a good design. Unfortunately the forum is full of complaints about how these popups interrup our work.
btw, "reset your preferences" is a standard recommendation when Adobe software crashes.

Hello @Fine Art P,
I understand the frustration with the repeated pop-up advertisements. Many users have shared similar concerns, and your feedback is valuable. Currently, there isn't a direct setting within Illustrator to disable these pop-ups.
However, to make your voice heard and express your concern directly to the Illustrator team, you can visit the Illustrator UserVoice forum (https://adobe.ly/3u7w0KG). This forum is actively monitored by the Product team, and users can upvote existing suggestions or create new ones.
Feel free to reach out if you have more questions or need assistance. We'd be happy to help.
Thanks,
Anubhav

Voted. I hope in future Adobe can find contentment with the idea that not everyone who uses their products is focused on new features. Many of us are professionals working on time-sensitive projects. Interrupting our work at random (and sometimes critical) times isn't just a frustration. This is about our jobs. Many of us just want a stable tool free from crashes, pop-ups, and other random behavior that stands between us and our work goals.
