Hi....Does anyone know how to fix this issue? Most of the time when I am drawing, Illustrator will mess up my lines. Ex: The swirl, it filled in the center. You can see the second shape (snow clump) - the lines are totally off as well. Any suggestions? Thank you!

Looks like that bug with calligraphy strokes.
Do you need calligraphy strokes?
If not, just set them to "Basic" in the brushes panel.

Ahh thank you so much! (To everyone as well) This is going to save me so much time. Do you mind if I ask, is there a way to set it permanently to this? Sometimes even though when I click on Basic - if I pick up my pen, start again, it will switch back to calligraphy. Thank you!

You could use the pencil tool when drawing strokes instead of the brush tool.

Ctrl/Cmd+E should toggle between GPU and CPU, can you see it change to CPU (either GPU or CPU shown together with the Color Mode)?
If not,you may try disabling the GPU Performance by clicking the Rocket Icon in the App bar, or on the top of the menu bar, and deselecting the GPU Performance check box; you may also uncheck GPU Performance in your Preferences.
