I work with a lot of white logos and graphics, so I prefer a light gray artboard. I know how to change the color of an individual artboard, but how can I set it as default so every new artboard I create/open is light gray?

You could, in the document setup, set both transparency grid colors to the same light grey.

In your document select: View > Show Transparency Grid.

Save the document and rename it as a template: change the .ai extension to .ait.

Use it for your new documents.
