Which version of Illustrator are your running?
I'm running Illustrator 26.2.1 under macOS 11.6.2 Big Sur on an Apple M1 Mac mini 16GB/2TB and GPU Performace being enabled works as expected.

Sorry to hear about this experience. Please confirm the exact version of the OS and Illustrator.
I would request you check if Illustrator works without any issues with GPU Performance turned on under the root user account. If it does, kindly follow these steps under your regular account:
- Fix file permissions by following the steps in this article: https://helpx.adobe.com/in/illustrator/kb/preferences-folder-read-only-error.html
- Add Illustrator to Full Disk Access under System Preferences
Go to System Preferences > Security and Privacy > Full Disk Access > Check Adobe Illustrator. It will ask you to quit Illustrator and relaunch it again.

Hi there, Hope you're staying healthy. I'm using OS Version is: 12.3.1 (21E258)
I can't find "adobe" folder after the path: /Users/<user>/Library/Preferences/
and I also try to Go to System Preferences > Security and Privacy > Full Disk Access > Check Adobe Illustrator. It will ask you to quit Illustrator and relaunch it again.
but still now working. Please help me

- Spindump by following the steps shared in this article: https://helpx.adobe.com/uk/photoshop/kb/how-to-get-a-process-sample-or-spindump.html
- SPX file by following these steps:
Click on Apple Icon > About this Mac > System Report
This will launch the System Profiler
Then Click File > Save > Save in Creative Cloud Files
Then open https://assets.adobe.com/files
Click on three dots next to SPX file > Share > Copy Link and paste it in a private message.
