How do you add anti-aliasing to new text in an existing .eps file?

I open my .eps file, remove the text I want to replace and type the new text. I want to set the anti-aliasing to “Strong”, but the anti-aliasing is grayed out.

If I use the Selection Tool to select the text, the anti-aliasing option is available, but nothing happens when you change it.
