Hi all,
I have recently installed some apps from Creative Cloud 2020, and Illustrator is not perfoming well on my iMac Catalina. The zoom in and out is really slow and is very frustrating (slow and then it zooms in/out too fast, like a "post" reaction), moving around the artboards also slow. In general, low permormance and my machine is brand new, the rest of apps are working fine.
I have read this is a bug from Adobe, but still no solutions? Please share if you know any way I can fix this.

When you installed the update did you have the option to import previous settings and preferences checked? If so then try trashing your preferences as slow performance can be an issue when using preferences that were established for a previous version. Hopefully, setting the program back to default settings will speed things up for you.
To do so on a Mac:
The User Library folder in which Illustrator’s preferences are stored is hidden by default on most Macintoshes. To access it make sure that Illustrator is closed and click on the desktop to launch a Finder Window (Command-N).With this window in column view follow the path User>Home folder (it’s the folder with an icon that looks like a house—it may have the user’s name rather than “Home”) and click on the Home folder. With the Option Key pressed choose Library from the Finder Go Menu. “Library” will now appear within the Home folder. Within the Library folder find the folder called Preferences and within it find the folder called “Adobe Illustrator <Version #> Settings” (earlier versions of Illustrator might just say “Adobe Illustrator”) and the file called “com.adobe.Illustrator.plist” and delete both that folder and that file. When Illustrator is next launched it will create new preference files and the program will be restored to its defaults.
The advantage of manually deleting preference files in this manner is that after you’ve reset up the program (make sure that no document window is open) to your liking, you can create copies of your personalized “mint” preference files (make sure that you quit the program before copying them—that finalizes your customization) and use them in the future to replace any corrupt versions you may need to delete.

Just to clarify, I am having this issue since the moment I installed Illustrator for the first time in my brand new machine, 2 months ago.
I have followed all the steps, however stuck in the last bit, where I cannot see the file called “com.adobe.Illustrator.plist”. Shall I delete the whole file called "Adobe Illustrator 24 Settings"? Please see screenshot below:

Yes. Doing so will reset the program to its defaults. (See the last paragraph in my instructions).

Sorry, I did it, and it didn't work. Also having the same issue with Indesign 😞
It is getting worse, it is mostly the zoom in/out, moving around the artboards, and even saving the documents is taking very long now.

Where are you saving files?
Can you try and turn off the background save option in Preferences > File Handling & Clipboard?
Also: do you have a printer attached, set up as the default printer and turned on?

I save my files in my Documents folder.
I have tried with the below options, and no results.
