Illustrator changes the writing's and omits some shapes when exporting to pdf

I've just finished working on an alternative version of a board-game I possess; since it's now ready for printing, I export to PDF but when I do so, the software keeps changing the colour of a specific set of writings and it also keeps omitting some specific coloured rectangles.

See also how after eporting the writings have been set to pure black instead of that greyish pantone I picked from the graphic under it.

Illustrator keeps leaving out at least 3 of my coloured rectangles when exporting and all my "vertical writings" are set to Black even though in the document the pantone is different.

The document is already set to CMYK and I already tried changing some of the exporting settings but nothing changed.

I looked for a similar issue inside this forum but I found no answer that helped me solve mine.

I use Windows 11, if that helps.

Your posts include several mentions of "export," but Illustrator doesn't have export to PDF, so you must be using "Save As..." right? If so, it might help if you post screenshots of your Save As PDF settings, and explain which settings you tried changing.

Yes, sorry, I was referring to the "save as" function. This is are the screenshot from it, as you asked:

   

On a side-note I made a little advancament and that is retaining the colour of the texts I mentioned earlier, the ones turning into pitch-black; I think I did so by changing to "include all profiles" in the "Profile Inclusion Policy" setting, even though that makes no sense to me.
The coloured rectangles are still disappearing, though; they disappear even if I copy one which didn't in a previous saving and reporpouse it.

Any particular reason you are using a custom Save As and not one of the industry standard ones?
