When working in Illustrator in CMYK color mode, the colors appear as RGB. It is only when I export the file that I can see the true CMYK colors. Why would this be? Is there any way to fix this so I can work in the actual CMYK colors in the document?

And what is your Document Color Profile?

Yes, that is the setting. Is the Proof turned on or off?
Can you please describe exactly what is happening? What makes you think thatn something is displayed the wrong way? What is it? Your colors assigned in Illustrator or is it a photo that is displayed wrong?
