Hi, I used gs to convert an SVG to PDF
On my PC and MAC, this modal is displayed when I open the PDF
And then the PDF is displayed correctly
But on the client's PC, the modal is not shown at all and the PDF is displayed like this
I couldn't figure out the configuration difference between my PC and the client PC that could cause this issue
Is there a setting I should enable in Illustrator?
We are both using Illustrator v25 and we both have all the relevant fonts installed

What is gs?
Why is the client opening a pdf in Illustrator? Unless you embed the fonts or aftere you get thatn mesage maek sure the ofnts are outlined and save the pdf with the fonts outlined.

Do you both have the same version of the fonts installed? It is possible that you have an opentype version of the fonts installed while your client may have truetype. In this case even fonts with the same name will not be recognized as the same.

So you used Ghost Script? Why? You could have imported the SVG directly into Illustrator.
In a PDF fonts get renamed sometimes. Also their names might differ on Mac and PC. Illustrator is not a general purpose PDF editor nor were PDFs ever meant to be edited.
If you insist in opening that PDF with Illustrator, outline all the text before saving the PDF.

Differences in encoding between font formats/embedded subsets and even platform will cause the "missing glyph" issue.
In addition to the other good advice offered here, if your goal is to outline the fonts, and you have a PDF, DO NOT open it in Illustrator; instead PLACE it into a new document, then Flatten it (Object > Flatten Transparency > High Resolution > Convert All Text to Outlines).
This will force the outlines based on the embedded fonts instead of relying on system fonts

Important fact: ILLUSTRATOR IS NOT A GENERAL PDF EDITOR. Expect this sort of thing if you try to use it in this way. Indeed, it seems to make no sense to convert a perfectly good SVG to PDF just to open it in Illustrator...?
