Illustrator won't print after shutting down unless I reinstall the printer driver every time

Everytime I shut my computer down, Illustrator forgets what post-script is until I reinstall my printer driver. I've reinstalled the same printer driver from the same downloaded file multiple times now. I shut my computer down for the weekend - and every monday when I boot up it will refuse to print from illustrator until I reinstall the driver. I've tried waiting, days even, to see if it will start working on its own as sometimes illustrator likes to forget thiings for the first few minutes that it is open (like fonts,) but this never resolves on its own. I can work around it, but it is extremely annoying to have to do this every monday just to get my software to work - and the printer works fine with other software. It is an Epson Ecotank ET-2850

Which system is it?

Are you in a company setting, where an IT runs nightly tasks that clean anything you installed?

Do you have the printer's latest driver installed? A couple thing things that might be worth checking (especially your computer is a few years old) the USB cable and the computer's port it is using. Sometimes USB ports go bad or start acting flaky.

Since you mentioned Postscript does the printer have native support for Postscript or PDF? Sometimes printers will have more than one mode (or driver) it can use to print documents. PCL is very common.
