Image trace settings

Im trying to create a vector for an image and the only two settings I am finding is "Make" & "Make & Expand". I've seen countless videos of people doing it and making a High Fidelity vector and it seems like that option has just been simply removed? As well as all the other settings such as 6 color etc. Does Adobe now only give you one option when image tracing now?

You have to open the image trace docker. WINDOW > IMAGE TRACE
