Standard answer: Update your system's graphics driver and check the hasrdware acceleration setttings in the preferences. Revert to software-only previews if nothing else works.

Thanks for reaching out. This seems like a UI or GPU issue. In addition to the Mylenium suggestion, would you mind trying a couple of steps and seeing if that helps:

 

  • Rename the CEP folder to CEP.old from the following location:
    C:\Program Files (x86)\Common Files\Adobe
  • If that doesn't help, rename the UXP folder to UXP.old from the following locations:
    C:\Program Files\Common Files\Adobe\
    C:\Program Files (x86)\Common Files\Adobe

 

If this doesn't help either, would you mind confirming the exact version of Illustrator & OS, along with a screenshot of the system specification?
